Think it’s impossible to make rice cakes delightful? I think I’ve found a way. It’s all about what else you use them to deliver. 🙂 Here’s my latest tasty afternoon snack, that feels like a dessert but with a lot less calories. Feel free to riff off it and let me know what you try!

IMG_9356Ingredients (brands I use are shown to the right; rice cake is GF and vegan):

  • 1 rice cake
  • 1/2 banana
  • 1 Tbsp almond butter
  • dash of unsweetened coconut flakes
  • dash of cocoa nibs
  • dash of nutmeg

IMG_9352Carefully spread almond butter evenly across rice cake. Sprinkle with coconut flakes and cocoa nibs. Slice the banana and arrange it on top, and sprinkle with the nutmeg. Have a napkin handy and enjoy with a cup of tea, if you’re so inclined!

Approx nutrition info (based on MyFitnessPal calculations): 235 cals, 33g carbs, 12g fat, 7g protein, 8g sugar, 6g fiber.
