Think it’s impossible to make rice cakes delightful? I think I’ve found a way. It’s all about what else you use them to deliver. 🙂 Here’s my latest tasty afternoon snack, that feels like a dessert but with a lot less calories. Feel free to riff off it and let me know what you try!
- 1 rice cake
- 1/2 banana
- 1 Tbsp almond butter
- dash of unsweetened coconut flakes
- dash of cocoa nibs
- dash of nutmeg
Carefully spread almond butter evenly across rice cake. Sprinkle with coconut flakes and cocoa nibs. Slice the banana and arrange it on top, and sprinkle with the nutmeg. Have a napkin handy and enjoy with a cup of tea, if you’re so inclined!
